Go with a CZ 75 or derivative. There are people who shoot Bullseye pistol with them stock. Very accurate out of the box. Put a reflex red dot on it. Go shoot. A lot.
These guys can help with grips made to fit YOUR hand.Thanks for the suggestions everyone. I will add that I've got big hands. A model 19 doesn't really fit me: I can't get my finger in the trigger guard without breaking my grip from the gun and I end up pulling the trigger with the second joint of my finger (closest to palm). There is no way for me to contort my fingers in such a way as to use the pad of my finger, or even the first joint like a lot of folks do. So that's a major consideration and part of why I was thinking of going with a large, full-frame pistol. A generously sized trigger guard, changeable grips, and an adjustable trigger shoe would be very nice options to have!

The P210 target is the best of of the box precision pistol I can think of.I don't know about the CZ but you might want to check out the SIG P210 Target. The reviews look pretty good for it and it looks like it would fit your requirements.
