As an aside, what is a good starter pellet grill in the $500-$700 range for smoking? Looks like several good options but real experience vs unknown reviews preferred.
 
Smoked teriyaki venison jerky:

Ingredients:
2# ground venison
2 TBS table salt
2 TBS brown sugar
4 TBS teriyaki sauce
Optional: pepper to your taste on strips

Combine ingredients and let it sit in the reefer for at least four hours. Overnight is good too. Form into strips with a jerky gun or roller ~ 3/16" thick. Jerky racks work best because of smaller mesh size. Preheat smoker. Smoke at 140 F to 150 F for 4 hours using Mesquite or Hickory. For a milder flavor Apple or Cherry. Makes excellent munchies for deer camp using that venison you have left from last season.
 
Anyone have a good brine for smoked salmon? Mine is too salty.
I’ve always used the standard brine, one cup salt, one cup brown sugar to one gallon water. Be sure to rinse the meat after pulling from brine. If you don’t rinse, things will be extra salty. What have you been using for a brine?

I use to do equal parts salt and brown sugar but changed to 1/3 salt 2/3 brown sugar. Much less salty for sure. I'm soaking two spatchcocked chickens in it right now for the smoker later.
