BBQ Smoker Grill, Build or Buy ??

Thank you all..I'm really learning stuff here...One question .. Do any of you guys use recipes or techniques from that Malcolm Reed guy ??..How to BBQRight ...found him on you-tube...Thanks for all the responses..Mike in Ct

Last time we had one of these BBQ threads asking about types and styles, it got pulled for some reason. I think somebody got offended when I mentioned that I dumped the offset smoker and went with a pellet cooker instead. For some, it's not real BBQ if it comes out of a pellet cooker even though your taste buds would never know the difference. Dare I say it's even better in many instances because of the ability to precisely control temperature for the entire cook. That's the key to the whole operation IMO.

I bought one of these 3 years ago and haven't looked back. I did make a different top rack for it though because the one that comes with it is too small in my opinion.

I've cooked everything. Brisket, pork butt, pork ribs, turkey, chicken, beef short ribs, ham, chops, to pizza and macaroni and cheese. Nothing quite like having a pork butt on the top rack and having the drippings drop in to the beans below...

don't matter what kind it is, as long as it works for you. If others don't like what comes off it, send them home hungry,,
 
My son works for the author of this book. My son is a Sous Chef at his restaurant in Detroit. He gave me this book as a reference for grilling, smoking and cooking all things meat. Pretty informative but comprehensive guide from the backyard guy to the most articulate cook. I've used some of the stuff and it's outstanding information. Amazing ribs is another source as mentioned earlier.

Just a funny BBQ story, at least I think so. In 1986, I went to Mason Michigan to shoot all 4 days of the Michigan State Trapshoot. I got on the grounds on Wednesday afternoon and was checking everything out. I overheard a couple of the locals talking about some of the extra things happening and, in their words, On Friday evening the club was hosting a "Real" Texas BBQ. The question was raised about what they were using to cook it. The first guy said, "they are going to use what the pros use, Royal Oak Charcoal".
I got a good chuckle out of that. I had a good shoot too. Won the Non Resident HAA and HOA.

I love malcoms recipes, he is really knowledgeable and has great recipes. I've done many and all have been great to amazing. I use and like all his rubs and sauces as well - Kosmos q has some really good ones too. He is great source of smoking, recipes and techniques. I like all types of bbq so I really enjoy trying all the different styles and methods.

Some others to watch are

Aim em and claim em
T roy cooks

They all offer great vids and recipes. Also I just leafed through the past 8 pages so not sure if anyone has brought up doing an uglydrum build. I did one and its now my go to and it was easy and cheap. I have a pretty good pellet smoker but i enjoy the cooking of the drum the best. Only draw back for me is the cooking space but it holds temp very well. Next spring I'd like to get into an offset . . it's addicting Here's a pic of it, I don't know why they call them ugly
