Thinking about building a rifle- what caliber should I get?

be nice to see if it flawlessly ejects spent cases

Feeding from a magazine has nothing to do with case extraction and ejection. If you can't get a case to extract and eject properly with any action in any configuration with any chambering, you have a problem...and I wouldn't suggest looking at the magazine ;)

I just built a 6.5-06 so that won’t help you much. You don’t need that much horsepower. I built it on a Criterion Varmint profile 26” barrel on a Remage system. Then bolted it into an Oryx chassis…. I debated for a while on whether to use a standard Remington Action. In the end I decided to by a Mack Brothers long Evo SS action and Mack’s 20 moa Picatinny rail. The trigger that came with the action is a two stage trigger tech special. That trigger is every bit as good as my Geissele Super 700 and much easier to adjust.. I have Not for one minute regretted going with the custom action and would do the same tomorrow. I torqued the barrel down on the head space gauges. And shot 4 groups, 2 of which were 1/2” clover leafs at 100 with 147s. with a little more load developed that put the first three under.2. Of course my 4th shot double that. But the main point I’m making is the action. Perhaps a standard Remington donor would have done well. But the Mack made the job a lot cleaner and easier. I’d spend that $ again in a second. The action is slick as glass and I wwwwcan screw a barrel off, and put another one on Inside of 10 minutes.

I'm with @357Mag!!

The venerable 250 Savage.
I put a 24" E.R. Shaw barrel in 250 Savage on my Stevens 200 after shooting out the original 7mm-08 barrel.

75gr Sierra HP, and 90gr Sierra BlitzKings make short work of coyotes out to 400 yards. (Furthest i've shot one with it thus far)
Load up some 100gr or 115gr Ballistic Tips and go deer hunting.
Took 2 deer the other year with the 100gr.

THIS!!!!

272 neck /125 freeboreish 6BR. 1-8 twist Heavy varmint or bull 26"

Except I would say to get a Criterion barrel and install it yourself. Install a Jewell varmint trigger, and get a Aluminum bedding system stock from Revolution from Stocky's Stocks and you are done. No need to wait for a "build".

And now this is the system I provide to my customers with my products. The model of my store.

I think you need to do the research, and make the decision based on what you know to be true not what someone tells you that you want. Go to the range ask questions look at rifles my SIL wants a 6.5 creedmoor (yea I know), at the range a nice young guy says try mine. Now he has real world experience. Asking for an opinion is not all that good, someone thought it was good idea to marry Hillary Clinton.

Yup! We’re just talking amongst ourselves. I’m building another 6.5 x 47, so I should rant about how it’s the bestest most awesomest cartridge on the planet.
I won’t. I might be a closet “woke” person. I like and embrace diversity in my rifle collection. Black guns, brown guns...I even have a Gay gun. It’s a 6.5 Creedmoor with a bright yellow stock. I have a “transgender” gun, too. One day it’s a 6 br and the next day it’s a 30 br.
