Where I work, we store a large quantity of firearm cleaning and lubricating liquids. We get get quarterly notice and no-notice inspections from both state and federal environmental compliance inspectors. Their concern with expiration dates on these liquids is that the container that houses them (plastic jugs mostly) can still effectively contain the liquid. Some of our solvents are past their expiration dates but the containers are still like new. To be in compliance, I extend the expiration date by 2 years (on the proper forms of course) and the inspectors have never had an issue with that.
In your case, the shelf life might be related to the container and not the solvent.

I recently switched to the Boretech products and have had the same experienceI hate to "rain on your parade" so to speak but you may find it worthwhile.
I used Shooter's Choice for over 30 years and I thought it was doing a great job. A few years back my wife developed a sensitivity to the smell so I searched for an alternative that was odorless.
I tried Bore Tech products only because they were odorless. I was shocked by the results. First, their Carbon Remover, C4, did a superior job judging by the condition of the patches. But it was their Copper Remover, CU+2, that really impressed me. It did a far better job of removing copper than Shooter's Choice.
You may want to try a small bottle of each and judge for yourself but my guess is that you'll use the gallon of Shooter's Choice as an outside insect remedy and switch to Bore Tech products for cleaning your rifles.
PS: I use the Bore Tech two part system, i.e. Carbon Remover, C4, first with a bronze brush then after dry patching I apply the Copper Remover.
