Who looks through the scope with both eyes open, one closed or with an ocluder on the non dominant eyeball ?
 
I close one eye. I've been practicing using both eyes open while shooting my hand guns. When I get back on my rifles, I intend practice with both eyes open, as well.

I'm left eye dominant but shoot right handed (both sort of locked in by 71 years of shooting). For a scoped rifle I close the left eye and aim with the right. For a pistol I close the right eye and aim with the left. Probably not the best solution but it works for me.

With the exception of some form of vision impairment or night combat, I think shooting with both eyes open is preferred, one being on the sights and POA while the other is doing secondary duty on the environment, flags/wind, level, etc.

For the majority eye dominance isn't an issue. For a minority, cross dominance presents a handicap that can be addressed using one of several different ways. Closing one eye briefly while aiming, shooting, and follow through isn't necessarily bad, it's just not ideal. Dominance isn't normally hard wired and can be changed, either in the use of our eyes or the use of our hands. However either is time consuming and takes effort to accomplish, and falls into that category of "use it, or lose it" skills.

In my case, over my 71 years of shooting, I've gone from neutral to right eye dominant then to left eye dominant due to injuries, health issues and age but have learned to adapt. Whenever possible I prefer to have both eyes open but that rarely works for me anymore.

When our body ages and/or takes injuries, it will often adapt without much effort, other times despite our best effort we may not be able to convince it to behave as we wish!!
 
Both rifle and pistol right eye open and left eye closed. I'm right handed and left eye dominant, I've tried the both eyes open and it simply doesn't work for me the left eye dominance come and goes and it drives me crazy, best solution for me is to close the left eye. Do the same for both rifle and pistol and both iron sight and scope/dot sights.

Both open. My dad instilled that in me while I was still single digits of age.
 
both eyes open. Minimizes eye strain (more relaxed visual picture), and for me, lets in more light, making the target more visible. When I shot smallbore competitively (pistol or rifle) I used an occluder.

Pretty much the same for me. I am right handed and very left eye dominant. There is no way that I can see through a scope with my right eye while my left eye is open. Of course closing my left eye causes severe eye fatigue and usually a headache if I shoot to long. I’ve thought about trying a patch or something for my left eye to see if that helps.

For extended sessions I don't actually close the non-aiming eye, but instead blackout the lens of my shooting glasses for the appropriate eye (left for rifle, right for pistol in my case). This is simple and much more comfortable.
