Building another rifle - What cartridge?

In contrast to the 2 pages of suggested cartridges, I think there is a hole in the area between the .300 WM and the .375 H&H. Limited by the bolt face take a look at the .338 Gibbs, or the .338 Hawk (338-06 AI), either or both are excellent on the rim size designated.

If you decide you might want to go big or go home then switch to the .338 Edge which is built on the very improved .300 RUM case.

Another vote for a 35 Whelen. Or a 338-06. Only gap you've got is between your 30s and the 375 as mentioned above.
 
One of the 338 factory cartridges. I'm pretty much not a wildcat person anymore. You're probably not going to sell it, but a wildcat greatly reduces the value.

If scrawny Ozark whitetails are your quarry, I’d say your current arsenal has it covered in spades. Other than that, I’d agree with other posters that a .35 Whelen or .338-06 would he a good over-thirty cartridge. If you’re looking for something more esoteric how about something based off the 6.5 Weatherby RPM case?
 
Model 70 pre 64 calibers you don't have with appropriate bolt face:

220 swift, 250 savage, 257 Roberts, 7x57 and 300 savage
 
I started hunting as a boy with a Mod 94 25-35. Graduated to a 35 Rem Auto then to a Savage 30-06.
I then decided to build my own rifle after building two Bench Rest guns.
So, I bought a VZ24 Mauser action and a WWII 7X57 surplus barrel.
Did all the pretty stuff like a laminated stock, piller bedded and glassed. Added a new safety to use with a scope and went hunting.
The first year using A-MAX 162 gr bullets I shot a Black Tail and a small pig within 30 minutes. Both dropped with one shot but exit damage was exrtensive so I switched to solid copper TTSX 140 gr bullets.
After learning to jump them nearly 0.100" they out shot the A-MAX. it is now a sub MOA deer gun!
The 7X57 is a deadly accurate round that will kill any North American game. Just ask Teddy Roosvelt about the leathality of the 7X57!
