BBQ Smoker Grill, Build or Buy ??

Found 24 inch paper and the cotton string on Amazon. Also a little pellet tube to lay on grill to help add some extra smoke. Can’t wait to get a brisket going. 225 on the heat the whole cook?
keep mine around 235 no more than 245
 
Anyone have any Beef Brisket tips?? Picking one up tonight for Sunday. Will be smoking on my GMG.

Save your money on fancy rubs, seriously, the best tasting briskets I have made are salt and pepper rubbed.

If you have an injector, fill a mason jar half full with apple juice. Add one tablespoon of salt, and one of pepper, and two of unseasoned tenderizer. Inject all of this in the brisket in the grain.

250 degrees cooking temp. Cover at 160 degrees (about 6 hours). Finish to 200 (about 9 total). Store for 4 to 10 hours in a cooler covered in towels. Eat.

Try it. I promise you you'll love it. Thats from my back in the day mentor, Paul Prudhomme. Prior to adding the rub, be sure to coat the meat with vegetable oil. Don't go crazy with the oil.
