Anyone got a good Iguana recipe?

I ate Iguana a bunch of times camped out with maya indians. By the time it had stewed in hot red chili sauce for a few hrs it could have been any kind of white meat. Kid in red cap was son of the dad I hired to take me down the river after jags. Turtles had better flavor. Iguana was like chicken and tasted of what it was cooked in.

The way things are going, people in this country might well have to get used to eating iguana, big head carp, python and some other things in a generation or so.

Went shark fishing with a guy in Tampa Bay, we had a bad weather day and couldn’t get out on the water. He took me and the wife farther south where he had permission to air gun the critters. He explained to me that it’s their feces and salmonella that’s the risk when being around them. I don’t know much about them other than there was a bunch of them, the PCPs were deadly out to a 100 and you wash your hands throughly if you touch them. I’m sure they are fine to eat but that was a turn off for me.

Yes, back in the old country, marinate with lemon, soy sauce and onion... iguana teriyaki... don't knock it till you try it.

Or deep fry them like these. Wuhan province special street food. Ate anything they sold on the streets as long as it's deep fried.

I'm not a reptile expert, but I've raised chickens and guineas in the past. You'd be hard pressed to find anything nastier than a bird yet people eat chicken all the time.

yes!! during my first visit. served em to me in a bowl of chili sauce. I had the whole family of 20 watching me and i tried like hell to chew one to bust it open but was impossible as the skin was tough and flexible. SO i just swallowed them whole and smiled. then they helped themselves to the rest in the pot and would take one out of the broth and bite a little hole in it and suck out the soft egg insides and toss the skin. They laughed like hell at me!
I was in Colombia once and they street vendors in the countryside would sell the iguana eggs like in the pic they were cooked and we tried some. tasted just like mini chicken hard boiled eggs. I have had sea turtle eggs too and were like chicken eggs.

Awesome. You and I would get along well trying local fare.

Whenever we had visitors when I was an expat in Tianjin, we give them one rule to follow. They don't have to finish what is served, but at least take a bite. I was at a point I can order my favorite food in Chinese. Fried intestine Sichuan style, fried Scorpions, live snake presented at the table, then blood mixed in with local white lighting to toast with.

That was 20 years ago.

I was on business trips overseas most of my career including expat for 4 years in China, one to adhere to, if you can't drink their water, don't eat the fresh salad on the return flight.

Sampled just about every street food in China, Korea, India, and tapas bars in Spain, never got food poisoning till I ate at a Filipino restaurant in Chandler, AZ.

My many trips to Hong Kong in the 80"s. General rule was don't drink the water, drink Tsingtao beer. The night market food area was something to see. Cats, Rats, Bats and some things you wern't quite sure what is was.

Insects and weird oriental foods not me!! I used to live in Belize and did alot of hunting and jungle exploring to take a break from the ocean. Belizeans love 'game meat' and back in the day I used to see restaurants serving game that was sold by hunters. Thats why there isnt much wildlife left anymore! No seasons no enforcement.
The #1 meat in Belize is 'Gibnut' which is a nocturnal fruit eating paca. It tastes like pasture raised pork and has fat that is sweet like pork chop fat. The locals scald and scrape just like you do a hog. He is a pic of my hunt friend with one and a bbq leg served poolside. Look at the foot!

I loved belize but i stayed out on the caye at night with all the expats. Wish i coulda got involved in some of that local fun

Ive lived in South Florida since 1957. These kinds of things were never here before . FWC is responsible for the python problem, they were responsible for issuing permits to own a python yet failed to check on the owners. I have heard that the iguanas came off of a ship from south or central America. The property owner behind me told me that the pair I saw in his drive live in a pond on the front of his property. seems as if a search and destroy mission is in order. Maybe Ma will let me touch her 10-22, though in the past she has been very protective of her Ruger. If I pass it off as a mission to protect her Aussie dogs she will be very willing to loan out her rifle. I had another 10-22 that shoot as good as ma's but I traded to a member here for a Glock 21, I was not as wise when younger.

I have a pesky Armadillo that I haven't caught up with yet. While checking for it about 2am this morning I had a raccoon out in the yard and a couple of deer. I've never trapped one up here, but have shot 10 so far over the last 10 years.
