Cant beat brined slow cooked chops! I always try to get the ones closer to the shoulder so they are the 'ribeye' part of the loin close to shoulder, instead of the drier t-bone on the rump side. Get a jar of this stuff and dollop it on top when you are finishing and dont need to turn again. I get it at the chefs store but amazon has too.

BBQ’s secret, fill up everybody on cheap sliced white bread and beans.

Red onion confit is one of my favorite toppings with grilled chops. Mango chutney is fantastic as well.

It would be hard to tell it’s really December there.

Sun rises about 7:30. We shoot 3-4 times a week at that time. Coldest it's been is around 40. Our flies don't die off till our first freeze and we still have flies.

Roast is getting there.
