Cant beat brined slow cooked chops! I always try to get the ones closer to the shoulder so they are the 'ribeye' part of the loin close to shoulder, instead of the drier t-bone on the rump side. Get a jar of this stuff and dollop it on top when you are finishing and dont need to turn again. I get it at the chefs store but amazon has too.$6.99 is a great price for standing rib roast my local Publix has it on sale for 9.99
