A BBQ thread

Hitachi are my favorite steels for kitchen knives, they are a joy to sharpen and even a bigger joy to use, IFYKYK ! LOL. The 2 knives on the left in the photo above are made by; Shiro Kamo, they are SG2 powdered steel core, which is similar to R2, and they have a Stainless Damascus cladding, 63+HRC. 135mm Petty and a 210mm Gyuto.

The next is a Anryu Hitachi Blue #2, 210mm Gyuto made by 4th generation blade smith Katsutoshi Anryu, he retied a few years ago and his nephew took over. I was lucky enough to get this one before he retired, the price on his knives has skyrocketed in value, I have had many offers to buy it. I have several of his knives.

the last is a Masakage Mizu 210mm Gyuto, Blue #2 made by Ikeda San, Its an older knife and a little more plain but what a workhorse and steaming sharp like the Anyru.

Those four get used all the time and are my go to knifes 90% of the time. I have a bunch of others along with several single bevel, a Sakai White #2 Mioroshi Deba 210mm and a SAKAI BLUE #2 DEBA 180MM, I use them both for processing tuna and other fish and the 180mm for breaking down chickens and turkey and such, great for processing a bunch of ducks and geese.

And it's funny because I can see the silos for Mcelhaney Feed Lot for Five Rivers Cattle feeding from my front porch. 118,000 to 125,000 head at any given time and my kids work there.

This hamburger is the best I've ever had and it's not Five Rivers.

I did pick this one up for a tomato, onion, bell peppers etc. Stuff like that is mostly what I do.
 
Just brought home some good looking freshly ground 73/23.

Black n Bleu burgers and fries are happening this eve.
Man, beef prices here are ridiculous. The cheap 1lb chub of ground 70/30 is $8.99 here. I use a lot of ground pork and various brats/sausages simply because its so much cheaper. Just picked up 10.5lbs of brats for $19.98. Doesn't make a good burger, lol, but I can't complain about brats with seasoned onions and bells. Bit of the habanero pickled onions on the side. Julienned another habanero and mixed it in with the cooked veggies, too.

There is nothing like the flavor of Sierra Madre mountains Sonoran beef. It is tougher cause they are older as takes longer to get big surviving off sparse high desert feed. But I have good teeth and a sous vide! They finish their cows with a special hay grass they grown down there and some type of grain. The mexicans are very much purists for their beef so zero vaccines, hormones etc. Mexican burger meat dosent need ketchup, mustard etc...flavor is too good the mask it with goop!

I watch the sales for untrimmed Tri tip or buy bulk pack at Costco and grind it myself, then package in 1lbs chubs and freeze. Choice trimmed Tri Tip was $8 something a pound at Costco yesterday and some of them looked more like prime. Or I will get a whole chuck or shoulder clod from Costco and break it down and for roasts, grind and stew meat. Shit they had USDA prime brisket at Costco yesterday for $4.98lbs, I have ground that for burger and it's great. I refuse to pay that kind of money for ground beef, if Im in a bind I get it at Costco. I get pork shoulders and grind them too, it always nice to have some ground pork on hand.

I didn’t know until other day that most costco beef is sourced from Harris Ranch by Bakerfield Ca.
Alot of dairy there too so if your ribeye is size of a medium pizza then …
Was just there. Funny, the steakhouse at Harris ranch serves only choice cut. Even for their fillet.

That is because all their prime is in costco boxes!

I was in rural Utah some weeks back and went to local butcher/processor to order 8 ribsteaks 1 1/8th inch thick. ( $18/lb) Went back 4 days later to pick up and holy cow...each steak weighed 1 1/2 lbs!! Lesson learned is to ask the breed. I just assumed Angus but looks like I got Charolais. The quality was excellent but it is a bit less marbled in the loin, which dosent make it lesser and flavor is a tad richer. My wife helped me eat one last night!

The lot had about 80-90K head finishing up in it. Plenty of Prime walking around out there, lol! And the smell to go with it.
 
I really like my little Weber 1200 gas grill when I travel, it's small and easy to grill a quick meal BUT there's nothing like charcoal flavor so I just pulled the trigger on SnS Slow 'n Sear Home and Roam 18" charcoal kettle bundle

I agree on the charcoal, I really like my traditional PK aluminum grill.
