What’s easily available, yardage-wise? Have you shot it since new?

I’d go for at least 100 yards.

If 300’s available use that next.

Starting close is easier by far than trying to ‘get on’ at 600 or farther… which, with 6XC for hunting, I think would be A Bad Idea overall.
 
It all depends on what ranges you plan on shooting. Check out a ballistics table zeroing every 100 yards up to the max range you want to shoot. Then choose the one with the least amount of variance in the mid range trajectory.
 
In the last few years I have begun sighting all of my hunting rifles in for 100yds. Then I will dial up based on the area that I'll be hunting. Here in PA that means that in bear season I might leave it at 100yds or bump it up a little in more open woods. And for deer I'll I will usually dial it for 250 or 300yds for some of the fields that I hunt near...and I can always dial it down to zero if I'm hunting some thick cover or a swamp.

At the end of the day I dial it back to zero.

This makes it easy to grab a gun from the safe and look at it, and know where it is sighted in for....they are all zero'd for 100yds.

Does your scope has a first focal plane scaled reticle? if it does then there's no reason to go other than 100m. If it doesn't then running about 2.5" high at 100 should give you on hair holds till much farther than I'd like to use a 6mm in unknown wind. I just got back from South Africa and my longest shot was 490m with a .243AI which is ballistically very similar. Dialing 2.3mils and holding off a little for wind worked well at delivering me a really nice blesbok. It takes only a second to dial and if you're dialing then the critter is too far away for you to spook it really easily without a speaker being involved so you've probably got the time.
