NEW ! Knife Sharpening/Maintenace thread

The Lansky is an easy means to achieve a consistent angle. Many new knives have ever been beveled properly, and the optional diamond stone is a quick way to achieve the burr necessary as the first step.Then follow with progressively finer stones. My final tool, also used for routine touch-up, is the Lansky ceramic rod. I'm after fast, efficient, effective and this works for me. Not true ultimate, but razor sharp for routine use.
 
I was gifted with a TSProf sharpener which allows one to maintain a given angle on the blade, which I believe is the proper way to get a good edge. A very well made and engineered piece of equipment, although pricey.
It allows me to even sharpen the cheap chinese knives to a razor edge. It's a great piece of equipment made in Russia, I highly recommend it.

I had one of those in original condition, it was my grandfathers. Working a full weekend at the fire house about 30 years ago my wife and mother-in-law thought they would do me a favor and sold it at a tag sale. They got a whole $30 for it. Wasn't I lucky?
Fortunately, they never found the ice saw that was used back when he cut ice blocks for his business, that I still have in hiding.
it takes constant vigilance.
 
I have a obsession with knife sharpeining. Ive used waterstones ,belts and various devices. I settled on a Edge Pro. Even all these devices have a learning curve. A very serviceable razor edge can be had with a lot of them. Without breaking the bank... a Lansky or Gatco will serve many needs.
 
I like the edge pro design myself with Shapton glass stones. I made my own copy of the pro model years ago.

This one LoneWolf ? Ken Onion Work Sharp. Interesting features in that gizmo. I'd heard of it but never looked at one before today. mike
Thats it. A little learning curve initially, but great once you get a feel for it. I didn't want to chance ruining a good knife learning so I went to a local thrift/goodwill store & bought a dozen crappy random knives to play with for under $10 IIRC. Once I got my confidence up, THEN I proceeded with my Benchmades & other quality blades.
 
Over the years I have used what ever cheapo stone I could find at what ever store usually wally world or the sorts. I have used diamond to Arkansas oil stones. I have and still sharpen going into the edge as if taking a slice of the stone. This is the way I was taught as a child so I've just been doing it not knowing any better.. Watched many videos and read how people go opposite of this and feel for the rolled burr on the edge. While I can make one cut hair on my arm the way I sharpen now, I would like to be able to do better. Going away from the edge I seem to never be able to get one sharp at all. Got to be technique in it which I just haven't got yet. As far as a strait stone or diamond stone what do you all recommend and what grit or various grits to have?
 
Lots of people love the Pro/Chosera 800. I have the 1k but not the 800 (I bought it as part of a set). It performs perfectly well in this role. It's also a very good stone. If I were buying it alone, I would probably get the 800 but the 1k is fine in this role. Don't sweat the decision between these too much.

Do these need to be flattened? Are you "slicing" or reversing the blade with these?
 
I've got a tormek t4. Makes a blade as sharp as it needs to be but I can do far better by hand or with a gatco. Main benefit of the tormek is I can sharpen anything right now fast.
