Many of the Pet Loads for 308 Service Rifles were decent starting points in the AR10/SR25. There are few places on the interwebs that have papers on 308 loading for the M14 that have powders that are kind to the op rods of the M14s and 308 Garands which would be no problem for your AR10 platform. The Hornady books also had sections on 308 service rifle loading.
Glen Zediker passed away recently and it looks like the web site has been taken down, which is a real a shame. Some of his mini articles on 308 loading for the M1A/M14 are still around, on the MidSouth site.

A swap of the typical 168 SMK for the 165 SGK and a little load workup is typically easy at magazine length using CCI34 or CCI200. Mil-spec brass or commercial brass can both work fine, but sometimes there is a little difference in the charge to get to the same pressure if the commercial has a different volume. Down the page in this link you will see some rough idea of recipes for 308 in the older SR platforms. The load manuals like the Hornady that have specific sections on SR loads look very similar.

When friends show up with the wrong ammo for their AR10s to hunt, I load them a 165 SGK over 41.5 grains of IMR4895 and seat to 2.8". If that doesn't act well I immediately fall back to a box of FGMM and check out the rig. In that instance I found problems with the build. It may just be my emotion, but any AR or M14 platform should perform at least decently with a box of FGMM or something else is wrong. So, by that logic a close clone with a hunting bullet should be a decent starting point.
Some of the possibilities for short range shots can allow you to play with lighter bullets as has been mentioned. Some of the CMP games are limited to 200 yards, and there is lots to learn about bullets as light as 125 that have worked out well. A 308 has plenty of energy for deer at ranges where the lighter bullets can play well. These days, you have to stay flexible unless you are already sitting on your supplies.
