who's clear coat?

A bit pricey, but, the PPG ceramic clear coat is great stuff. It was formulated for Mercedes Benz and PORSCHE.
 
Ditzler premium clearcoat is very good at around 300.00 a gallon. I would go with preachers recommendation as eastwood will sell smaller quantity's to you. I would think a quart would last quite awhile.
 
I've used a handful of high end clears. RM Diamont and Glasurit are absolutely top notch, but you're going to pay for it! Also not necessary for a rifle stock... man, the stuff is nice though! :)

On the cheaper end, I've used a bunch, but prefer the Eastwood Euro, and/or TCP Global (http://www.tcpglobal.com/KUS-KIT-KC2020-QT_2.html#.U9-BmmMqmDc). I think the TCP Ultra Flow and Eastwood Euro might actually be one in the same... both will produce great results. I refinished my VW Golf, and decided on the TCP Global, it came out really nice! I've since used the Eastwood Euro clear on other projects, and like it equally as much as the TCP. Buy either one, do the proper prep work, and you'll have a fine finished product.

I work about 1/8th mile from the Eastwood plant, so I use their products A LOT! That's the only reason that I tried the Eastwood clear after using the TCP stuff. (I can just go buy it, no shipping/waiting). If ordering online, I'd definitely use TCP or Eastwood.
 
A more viscous consistency is another consideration with clears for gun stocks, as it's hard to prevent runs on all of the different curves and lines of a gun stock. Some clears are like water. That's not to say they are bad, just that they are more prone to runs. Of course wet sanding and buffing can fix those runs.
