From 7mm mag to 7x57 or 284 Win, how much length to clean up chamber? ignore bolt face issues.

Well, you can’t ignore diameters.
The 7 mm Mag is a larger diameter case than the 7x57, so you would have to eliminate the whole chamber body.
It is also larger than the 284, which is a nominal .500 at the web.
So, in both cases, you will loose around 2 inches if you cut the chamber off right at the shoulder.
