Looks good. Here is another way to keep your deer meat a long time without freezing it. My wife and I did not eat as much deer meat this year as normal so I decided to pressure can some of it so it would keep longer without freezer burn and empty the freezer getting ready to refill soon. I just thawed out and cut up some roast in about one inch cubes and packed the raw meat into 1 1/2 pint jars and put them in the pressure canner at 10 lbs pressure for 90 minutes. Tonight I opened up a jar of the meat and a quart of potatoes that I had pressure canned and dumped them into a pot and heated them up. Man was it good. That meat was so tender that it almost melted in my mouth. I defiantly will be canning more deer meat. YouTube is where I learned how to can the meat if you are interested in doing it.

I’ve had canned deer, it’s really good stuff! I gave some friends a deer and his wife canned the whole thing! She seemed to know exactly what she was doing. It doesn’t need thawed out either!

Does it have a shelf life? My mother in law used to can it and said it was good. Never did eat it so I can't say.

Good question, may be the smartest way to stock a shelter or basement for emergencies... I just read a couple reports on home canned meats, best around 1 yr but can last very long with nutrition degrading over time.

If you want to really add some flavor, lightly brown the raw meat in a skilled with oil before you pack it in the jars for canning. It is more work, but wow does it add flavor.

I used to can a lot of deer meat. Heat it up in Campbell's cream of mushroom soup in a pan. Quick to fix and very flavorful.
 
Immike the thawing out was the meat that had been in the freezer since last deer season. I thawed it out and cut it up and then canned it.
Canned goods will last years. I have eaten lots of stuff that is 3 or 4 years old and can not tell a difference from fresh. Yes canned goods are a way of stocking up for hard times also. There are many ways to prepare canned meat. Go to YouTube and do a search and you will see all kinds of ways. The way that I did mine was just raw meat with nothing added. That way like one suggested you can add to it, like cream of mushroom soup, which makes a great gravy like meal. I serve it over rice. I have been just cooking cubed meat with the soup in the crock pot on low for 8 hrs. Melts in your mouth. But with the canned meat just add the soup and heat and serve.
 
Dang it...yer all making me hungry....:p:D I have never tried venison that was canned...going to have to
look into that. Where I live seems I can't get a tag every year as it's now a draw system...makes venison
a real treat now whenever I can get it. Thankfully I have some friends that will share as I do for them.:)
 
Canning wild game is one of the bestest last secrets in thee world......

My mom had pressure cookers and canners running all the time growing up as did all her friends.... here in the west is fruit country so maybe that's where it starts I dunno but on the subject of deer meat??? OHHH YEAHHH...... canning with "flavors" is Da BOMB!

And the tenderness..... one thing I haven't seen mentioned, as a workin' man I've eaten more sammidges than steaks and canned deer meat is so tender you can mix it up like tuna fish for a meat sammitch.... A big ol' dollop of mayo, mebbeso some sour cream, mebbe some pepper/Tabasco/chile/Lowry's/Johnny's/Himalayan/liquid smoke..... you be the judge..... and mash it into a spread......

Or just fork the chunks outta' the Mason jar......

Canned venison, yessir!
