Help me with my roadtrip! Driving through NE, KS, OK, and TX

My wife and I are driving from Platte, SD to Seabrook, TX in mid-March of 2014. She and I are doing a half-marathon on Saturday the 15th and I'm also doing the full marathon on Sunday the 16th. We plan leaving the Tuesday before and and coming home the Tuesday after. We are going to take our time on the way down, turn it into a 3 day trip. We both love small towns and rural areas (probably since we are from both) and things like abandoned churches, schools, buildings, etc etc. I plan on taking highways on the way down, the Google maps below is just what it chooses and the actual route will be somewhat random and chosen on the way.

I'm looking for anyone that lives near my route to help me by recommending stops along the way. Great restaurants, interesting attractions, neat museums, dive bars, hole-in-the-walls, etc etc. I'm trying to not go out of the way more than 50 or so miles, but if it really seems interesting I'm sure I could make do. Since most locals tend to know the best places, I'm hoping some of you live or have lived near my route.

I appreciate the help!

 
Grill On The Hill in Oklahoma City. 324 SW 25th St. If you are a health food type runner, don't bother. Even the salads are not healthy. If like me, you run primarily so you can eat whatever you want, don't miss it.

H & H Shooting Sports in OKC used to have a really good chicken fried steak at their in-house diner, cooked in a black iron skillet. Been a while since I was there, and think they only served them on Sunday. They also have a lot of guns to browse through, so if they quit serving the CFS it still wouldn't be a wasted stop.

Back Door BBQ in OKC is getting some good press. I haven't personally tried it yet, so if you try it, let me know what you think.

Love the cheese steak sandwiches at Texadelphia. There are several of them in Dallas and Houston. It is an Austin originated restaurant.

You should be able to offset your 39.3 mile weekend with those stops.
 
take 281 to Grande Island, Hornady is here, I80 east to us 81 south to Salina, ks

I135 so to I 35, to Oklahoma city, I35 south to I 35E do I45 south.

lots of small towns in the area north of Okla to go slow through, forget Dallas, Okla city, Witchita etc, unless you got lots of time to fight traffic, just go through

If you are inclined to go a short ways past Houston, you can always check-out Galveston & Galveston Island.

The " Lone Star Flight Museum " ( on the island ) has WWII aircraft that you can not only look at, but also pay to fly in.

The island itself is very nice, with a lot of new construction since the most recent hurricane. There's a good size population of wild mustangs on the island, I read.

Roy's Barbeque, Chickasha, OK. Beef or pork either one. Ask for the hot sauce. Finish up with a piece of home made pecan pie. If you do it on a Friday, see if my cowboy buddy Greg is there.

Taking 3 days to go 1000 miles isn't too bad for me, for 3 months I drove 700 miles on Friday, 700 more on Sunday going back and forth from SD to Chicago once a month. I had guard drills and was waiting for my transfer to go through.

I do plan on steering clear of most large cities, those places are a trip for themselves.
