First time re-doing a rifle, where to start?

Have an old Stevens 325C, have posted re it before. Now its time to tear it down and re-finish the rifle.

The stock is solid but needs to be re-finished.

The barrel blueing is gone, the metal is ok.

Would like to take bolt apart and polish it as well.

Not looking to change or modify everything, just clean it up and re-finish everything.

Other than being careful taking everything apart and not taking too much material out at a time, what else to keep in mind?

Would like to use a light media to remove the old finish/blue/paint from the barrel, any reason not too?
 
It is well worth finding Brownell's Gunsmith Kinks books (they have been done several times since the '60s). There is a myriad of ways to remove blueing, raise dents in wood, remove wood finish, etc.. In lieu of that check out the gunsmithing books that are around - good tips to make your life easier the first time around. After that there will be no stopping you!
If you want to try and cold blue, try the paste version of cold blue. I found it much easier to achieve an even blue. Also, beware of over polishing before blueing, don't round your corners and/or stampings.

Planning to take the stock off, remove the barrel and take the bolt apart, anything else?
