carbon steel folding knife suggestion

I’m going to be the odd man out and tell you how much I love my bench made with the sheep’s foot blade. I sharpen it maybe once a month on a wicked edge set at 17.5 degrees.

It will sharpen to the point that it’s dangerous. I use it for cleaning birds, opening feed sacks, and all the usual stuff.

I’m sure not all their models are great, but my sheep’s foot “Proper” model is my favorite folder I have ever had.

I can sharpen most any knife wicked sharp. Have.several different methods depending on the knife. A lanski for my really good knives. Large diamond hones for my scandy blades. A worksharp for working blades. A chef's choice for kitchen knives. I used to think the only way to sharpen a knife was a.stone. as i get older I look for easier ways.
All of these work really well. Some are.just faster than others.

I quit sharpening knives for other people. They always cut themselves with them. My wife will not let me sharpen her knives. Most people don't know how to sharpen a knife. Takes a while to bring back the edge on an abused knife.

I have been using and abusing a Boker automatic for about five years. The AUS8 blade is tuff stuff. Carried a leatherman for years before that.

Nothing wrong with good carbon steel blade. I have a bunch of various folders, lock blades and fixed some factory some custom. One of my favorite carbons was the very first custom a buddy built. He used a file that was German made forget the maker. Some will say it can’t be done with good results. Give me a truck load of deer to skin and get out of the way.
The first year I field dressed, split some pelvis and skinned 14-17 deer, all it saw was a few swipes on a steel.

For me, stainless is not the way to go with a knife. Someone left their stainless filet knife at the cleaning station, so I took it home. Most difficult knife I have had to try to put a real edge on, finishing with a diamond stone. so now I use it to cut vegetables out of the garden with. He may have left it on purpose...:(
 
Like all metals, there are different steels, some hold a great edge, while others can't get an edge for love nor money. Stainless is no different.

I had a Myerchin Offshore Rigging knife years ago. It was a heavy stainless steel blade that took very little to put a razor edge on it and would hold the edge through use at work on the water. Sadly someone else took a liking to it. Would love to find another one. But the quality was exceptional. Here is the link to their website. They have fixed and folders.

I enjoy and own a number of knives, and started making full tang blades a couple of years ago. I carry an Opinel because it is very sharp, easy to sharpen, light weight, compact, and with a flawless locking mechanism. After visiting an old friend a couple of years ago he called to inform me my knife had fallen out onto the couch; I told him to keep and enjoy it. He is a retired commercial fisherman and said it was the best knife he had ever used. In other words don't worry about a $12 loss.

Similarly for a full tang knife the $15 Mora is unbeatable.

But like custom rifles, what ever someone has is the best.
