Best Les Baer 1911 for accuracy

@TomSawyerNW, are you looking to compete in a certain discipline or just have the most accurate 1911 at the range? If your wanting to get into NRA Bullseye type shooting, KC Crawford is a master craftsmen who builds and works on pistols for some of the best shooters out there. Accuracy X is also a good builder too. All depends on what your looking for above and beyond just "accuracy"

cjmill87, I was essentially looking for a really accurate 1911 without going overboard on prices. $2,000 is probably my upper limit.

Les Bear premier 11 or Springfield custom shop , or start a Colt NM collection at least with Colt they hold the value if you shop wisely
 
Les Baer may be the ticket then for you, just understand that like South Prairie Jim said, the manufacturer's accuracy claim and the accuracy that you can obtain by hand are two, sometimes very, different things. I'd offer that you look at a Dan Wesson, maybe a Valor, or other quality mid $1000-1500 1911 and put some of the saved money towards ammo or shooting classes to raise your accuracy ability to that of the pistol.
 
A 1911 has the ability to shoot so well, because by JMB's design, you are able to take all of the "slop" out of the gun.
If you start with a Straight (grooved/drilled) frame, and slide, adjust the fitment. Add a Good Custom Barrel, and Fit a Quality Link. Fit a Custom BUSHING, and spend Time TUNING a Quality trigger Sear, Hammer and Springs, you can build a tighter gun than you can buy, for a fraction of the cost.
A target gun has different goals than a defense gun, and may be just a little more finicky, to keep running 100%, and will need Specific handloads, where a carry gun is built loosely, to be dependable, and will eat any ammo you feed it. A carry gun will not have a target grade trigger, so as to protect the mfg from any accidental discharges.
You can Tune a light crisp (safe) trigger, that you can not buy.
It is mostly about proper, tight, fitment, of Quality parts, and the biggest factor is TIME.
Time to do it Right, and the Most limiting factor is the Time to learn to handle it correctly.
You can certainly build a Great 1911 in your budget, that will out shoot your abilities.

There are good pro gunsmith built 1911 pistols for sale regularly. A few Les Baer builds show up from time to time and some sit before they sell. Dunno why. Wilson Combat and Kimber seldom show up. What does seem to be a popular pistol is the Springfield Armory Range Master. There is a consensus amongst many that one of those will take you to expert.

30 something years ago.... I had turned into a handgun only hunter( besides archery).Was shooting everyday,yadayada. My bone stock 70 series NM would tear single ragged holes with 185g Winchester match ammo.Also,5g 231 behind a H&G 68,@25 yds.This was supported with bags from a solid bench.Still have it. If I could get a like new for 1300 posted above..... that's a good deal.
 
I greatly appreciate everyone's input. I certainly have a much better appreciation of the different 1911 brands that could give me what I'm looking for (I might have to put the $11,000 Cabot on hold for a few more years, lol). One suggestion was to not go with the highest end, but save some $$$, and put the extra toward improving shooting skills, which makes sense. I'm pretty sure, too, that I'll need break the habit of buying the cheapest ammo that I can find (I'm kinda cheap, lol). This has all been a great leabrgn experience for me, to say the least.
