About time for Morels, Hickory chickens, Molly Moochers.

Spring is here and the dryland fish will be popping up soon. Cant wait to throw em in the frying pan! What is your favorite recipe?
 
When I want a FABULOUS fish dinner, I do to THEE BEST seafood Restaurant in Houston>>> Pappas'.. I get either Halibut or Atlantic Grouper with "Alexander Sauce" on it... What is "Alexander Sauce"? Good question.. It is a "Zesty" creamy white wine sauce that has cut JUMBO shrimp and oysters in it laced with shredded crab meat! T-Rust me, there is nothing better in all this world!!
 
I must be "extra-old-school" thinking that "dry land fish" was some esoteric name for some pan-fish that were pan fried! LOL!!! And I ain't had a thing to drink!! Hehehehe...
 
Frost is still coming out of the ground, It even snowed yesterday.... Mushrooms we get at the store, I make mistakes all the time sure don't want that one hanging over my head. We love them fried in butter with steak and burgers, added to tomato sauce, nothing fancy just enjoy them.
 
They grow in my yard. Almost a gallon bag every year !!! Of course that bag never gets full. Lol. I use egg , flower and crappie. Man's gotta eat.
 
I had morels on my mind this past weekend... We still have ice in the yard, got snow this past Friday, it will be awhile 'til the morels are popping up but I'll welcome them anytime.

My favorite is still just slicing them in half lengthwise and soaking them in a brine for an hour or two, then lightly breading with flour and pan frying 'til they are golden brown crispy yet still a little fleshy on the inside. Toss a bit of salt on and I'm in heaven. The key (to me) is the amount of breading.

I also like to saute them with butter and red wine and serve over grilled steaks, or I've also fried a rabbit in a pan after cooking morels in the oil and it was great. It made for a spectacular gravy.

We air dry and freeze whatever we can't eat in one sitting, and save them for holidays and camping trips. It is very easy to add them to wild rice mixes or freeze dried soups but again, I'd rather just throw them in the frying pan with the walleye.
 
For morels, I soak in salt water shortly, dust with flour, and fry in hot butter. I like the outside kind of crisp, with the inside soft, then shake some salt on them. Just like a french fry.
 
As far as shrimp go on this Shrooms post, having caught 5 gal pails of HEADS, after heading. And this by casting over bait, the 26-30, 31-35 count have the best flavor. The ones that would have the entire head and iridescent tail sticking out crossways of my fairly large paw were sure fast to head after a night of casting but just not the flavor on my buds. I never could handle a 6' net. I started abt 30 yrs too late and had a reduced skill level to boot. Still fun to bring home a couple of 40 qt coolers of those mud bugs. If the tide was "right" in the middle of the work week, the next work day was not much fun.....Just a geezer memory.
 
I used to love scouring the woods for them in the early 70's. My mom would slice them then fry in butter. They stunk up the house so bad, that I never had the guts to try them. Years later I had them growing in my own yard. I would pick them and take to co-workers. I love portabellas, but still haven't tried morels.

Only thing I do different is change the water 2 or 3 times to get a few more bugs and bits of dirt out. Kids and I found a 2 gallon bucket full last weekend.
 
Our morels are about to start poppin any time. My chick has been harping at me to get her out for some. I've been telling her she'd do better to pick with one of my friends who is better than me at finding them. :D She made me feel all lovey dovey by saying "but I want to go do it with Youuuuu.":rolleyes: jd
