A ton of gunsmithing questions

I'm not 100 percent stuck on a sherman, but I like more challening calibers that will test me a bit. My reloading room is my get away.

I'd like to push a 180- 190 gn bullet about 2900 + fps. Not because I think it'll make me any better, I just want to set a goal try to get there.

I just love the loading part more than the shooting part.
I'm shooting 180vld out of a 7rem mag with re26....
 
I would go 280ai as well.

Me three. A 280 AI will easily push a 180 Hybrid at 2800-2850 with H-1000 form a 24" barrel. I usually get excellent accuracy, low ES, and the powder is temp stable.

Now I am a 30 cal and up guy, not a 7mm guy, but it's hard not to like the 280 AI as a std bolt face, long action cartridge.
 
If you don’t want to get new brass cause you have all that 6.5-284 brass then go with the 284win. But it you want what I consider the best 7mm cal is the 280AI. More efficient than the 7mag. The choice is yours ultimately.
 
Another question. Sorry I'm still learning.

I have a m16 extractor installed on my bolt now. Can I just put a magnum extractor in and be done if I decide to go with a mag caliber? Or is there still more needed to be done to accept a magnum case?
