Its a process to stabilize the wood, i believe it does something to the sugars in the wood giving it the toasted look.
I believe it also has a effect on the resonance that makes it ideal for instruments and rifle stocks.

I've got another 1 sitting here that im going to dye black 1st then knock it back for a purple top coat.
