We shoot the 130g speer btsp at 3000 with IMR 4895, so the 120's will be skipping along pretty good!
120g Nosler ballistic tips are very, very tough bullets. We have killed a lot of deer with them over the years.
120g V max would be my first choice, and I bet they would blow the whole azz end of of a coyote if your leade was not far enough with them on the run or trot.
Another great choice would be the 110g TNT.
4895ish powders on both of these powders should Rock!
