Polishing off melonite

Melonite isn’t a coating. It’s a chemical reaction on the surface of the metal. I’m sure you can grind the surface down but you are almost certainly going to make a mess of the bolt. Remove the surface and you’ve now reduced the diameter. I seriously doubt you can hold the grind to just the depth of the Nitride penetration. Super hard surface with softer underneath is gonna be a nightmare. Buy another bolt !
 
Is it possible to take a melonite finished bolt and polish off the black?

If so can you tell me how to go about it?

I would advise against attempting to remove Melonite. As already mentioned it is not a coating (like ceracoat) but instead a chemical reaction.
Melonite can still rust from sweat. I have to regularly clean my M&P Shield during the warmer months to keep it at bay. I have seen attempts to remove Melonite (attempting to) cause corrosion to form very quickly and more often.
