Oppossum Pie

20 Ritz crackers
1/2 tsp baking powder
3 egg whites
1 cup sugar
1/2 cup chopped almonds
1 tsp vanilla

Crumble crackers fine. Add baking powder to crumbs. Set aside.
Beat egg whites stiff. Add sugar to egg whites. Fold eggs into crumb mixture. Add nuts and vanilla. Pour into lightly greased pie pan. Bake 30 minutes at 325º.

If you were actually looking for a way to cook one of those ugly, toothy rat-tailed critters, then you're darn sure hungrier than I've ever been.

Himalayan Opossum Roast

5 lb beef roast

1 - onion, sliced

2 - Lb carrots peeled and cut into 2" pieces

3 - Lb potatoes peeled and cubed

Salt and pepper to taste.

Add above ingredients to a large baking dish, add a cup of water and roast in a 350 degree oven for 1 1/2 hours. Allow to stand 15 minutes before serving.

As for the opossum, leave him a layin' on the road side. A coyote or one of his relatives will be along directly to clean that up.

Yeah, but it's a dry heat! I attended a wedding in Kerrville last August and it wasn't that bad. Back home it was 95 with 90% humidity. It felt cooler in Texas. You "western" guys always roll your eyes at us easterners like we're all soft green horns. I invite you out here to try living free while being surrounded by Liberals. I know how Custer must have felt.

They went through hard times, wars, depressions and sacrifice. Today's citizens are too soft. Poor people in this country don't know what poor is (see below taken 9/18 in Africa). I say bring back the draft or initiate mandatory military service. One appreciates what they have after they've seen how 95% of the rest of the world lives. Sadly the new paradigm is everyone should live better without having to work for it and getting ahead is for someone else.

I have said that for years, at the very least mandatory boot camp. If you have no discipline you have nothing wether it be Military,sports,schools,boy scouts or even COLLEGES you will have nothing
