Ok, so I've done plenty of online research into my Mauser project before I even start work. It is a 1893 model, rechambered to 8x57 in 1939. Large ring, small threads.

I'm looking to build a rifle on the more accurate side, for various plinking/shooting fun. I'd also like something a bit out of ordinary for US rifles, so I'm thinking 7x57, or 6.5x57 or maybe even 6.5-06.

Of course I've got plenty of smithing and other work to do before I have to decide, and I've found most of the online assistance in how to do, or where to get done the work that I need.

I'll be keeping pressures low as I have no need to make another big boomer, so this is a question more on predicting the future. 6.5-06 appeals for the ease of acquiring brass and 6.5 bullets, but are the others any harder to convert/find?

I also think that 6.5-06 might be a little too long for the action, so maybe 6.5-08, but both tend to be higher pressure cartridges. 6.5x55 will be my default as reloading parts are easy to find, but I've got that itch to keep it closer to original thus the 7x57 idea, maybe go AI with it for a "modernization" of a classic cartridge.

Thoughts?

Are you sure it is an 1893 model?? Sounds more like a 1938 K Kale or Anaranka. The '06 length can be problematic in the shorter Turks. 6.5x55 is a good choice, as is a 260 or 6.5 CM. If you want it "classic" the 7x57 AI should be right on the heels of a 280, with less brass trimming!

 
These rifles shoot very well with 7X57mm even with original barrels, unless shot-out obviously. I'm on my third 7X57 'Contract' 7mm Mauser now, having started with a Boer War souvenir M1895 35 years ago. The two I now own are both Chilean long rifles, M1895 and M1912. The Chilean and Boer (Orange Free State) rifles were identical apart from the markings, both made by DWM. The M1912 is by Steyr with the the later 'M98 action. All three shoot/shot extremely well, the limitations nowadays being my eyes and the crude iron sights. The 1912 is my favourite though without a doubt - it's the sweetest, smoothest '98 action I've come across - way superior to the WW2 KAR98k 7.92 models that sell for huge amount of money in the UK these days.

It is hard to beat the 7mm Mauser round for accuracy, even with mild loads, and easy on the shoulder shooting. Commercial PPU ammo is readily available and quite accurate too. I buy and shoot it for the brass and then reload. When my eyes will allow it, I can shoot 2" groups at 100 yards with my reloads out of my 1895 Chilean Mauser. Having said that, you will also do well with the 6.5mm Swede or 6.5X57 if you prefer that caliber.

1893's were all small ring receivers (along with the Spanish, and Swede 94,96, and 38).
If you have large ring it's probably the 1938. As the milsurp market dried up- these were the last to go.

The '06 sure isn't a low-pressure cartridge...

If you're doing the work yourself, you should get/read thoroughly Kuhnhausen's book.
Mausers are case-hardened, you need to inspect carefully for lug setback before declaring it a suitable candidate for rebarreling.
 
Save yourself some time and money. Find and buy a Swedish M38 in 6.5x55!

I have been working on Turkish Mausers for 20 years.
I am going to hunt with one in October. It is 260 Rem throated 3.1" OAL repeater.

I have converted turks to 45acp single shot, 223 single shot, 7.62x25mm single shot 308 repeater, 7.62x39mm single shot, 243 repeater, 25/35 single shot and 7x57mm repeater.

Add to your list , mine is 30/30 , 44 mag , 444 marlin , more after coffee and my memory starts working.
Yes Turk mausers were / are very capable and strong enough for most hunting cartridges , even the 300 weatherby . The small ring threads do limit the cartridge size and pressure.
 
A lot more bedding block than a 6mmRem needed in this Turk.

I picked up a large ring Mauser in 8X57 the other year. Plan to turn it into a 7X57 build for my daughter.
I have a commercial Mauser (Whitworth) that i rebarreled to 284 Win.

I'm not sure of your hesitency about the 6.5X57, as far as brass goes?
For my 257 Roberts, i've been getting 7X57 Mauser brass, and just necking down.
Used to be plentiful & cheap.
