which 6.5 or other cartridge to build my first custom 1000 yard gun/ hunting rif

1200 yards is very doable.
You have a variety of options to choose from in terms of cartridges in 6.5 alone.
Even with most of my specialty pistols I confirm my drops out to either 1000 or 1200 yards in 100 yard increments.

I don't post very often here but I think I have some useful info on this subject. My daughter hunts with a 7mm saum with a 20 inch barrel it shoots 168 vld hunters at approximately 2940fps she shot a buck last year a 390yds it took a few steps and fell dead. She just shot a 20rd string to make sure it was working well this year at 800yds she shot a 197 10x with the same bullet. Rifle has no brake weighs around 11.5 pounds she is 105 pounds. We also have a savage lrp in 260 with a 26 inch barrel shooting 140,s it needs more moa to get to 800 then the saum with 6 inches of extra barrel. If you want a do all rifle go saum and don't look back you can use shorter barrel good for hunting and recoil should not be a issue. the saum is easier to load for I think, the only problem I see with it is brass availability. I was going to buy another LRP for another saum build but decided today to just pull the 260 barrel on the one we have and order a cbi 7mm saum barrel in the morning. Good luck
