Have any of you heard of "Stealthround"? From what I understand they make cases for loading subsonic rounds safely. However, I think their website is out of order. So I'm wondering if they are still available.

I don't know this specific maker, but I'll comment in general.
There's basically two ways to achieve "safer subsonic loads" by means of modifying the cartridge case, in rifle calibers. First is making special brass which has extremely thick walls and low internal capacity. On the outside the brass looks just like ordinary stuff. In Germany these are known as "reduzier hülsen",quick translation: reduced brass).
Other way is to make an adapter, which converts e.g. 308Win to 32ACP. The adapter is made from steel, and of course you can use it for as many rounds as you want,compared to "reduce brass" which needs to be reloaded after firing, just like regular brass). E.g. Lothat Walther makes these adapters, I'm not sure if they're available in US.
For my needs, the adapter has been better. I have a 308 adapter, and you can reload 32ACP cases with far heavier bullets than it's offered off-the-shelf. I've used 123gr with good results. The accuracy I get is something like 2" at 60y with factory pistol ammunition, and about the same with reloaded heavies.

I'd say you'll find nothing if you search for "reduced brass". That stuff is just not avail in US, and if it is avail the name is probably something else.
Olympian, which cartridge you're shooting? I'd say you're better off with regular cases and some Dacron. Or an adapter, if you don't insist on heavy bullets. And adapter can be made by a competent gunsmith,machine the outside in a lathe and chamber, or vice versa).

It may be expensive...However it would be much less expensive than an entire rifle built for this type of shooting. I have been told that reduced brass works extremely well and can be reloaded a bunch of times. Someone on this site must know how to get some....I'm going to keep holding out and looking.

Many antique-type arms shooters use IMR4198 to duplicate Black Powder loads when shooting heavy cast bullets. This can get you down close to subsonic levels.
Attached is Hodgdon data for 45/70 with heavy bullets. This is a very large case, but NOTE some of the starting velocities are down around 1100 fps.
Note also, with a straight-walled cartridge like the 45/70 you can cut down your cases or seat bullets deep to reduce effective case capacity. WARNING WARNING WARNING WARNING -- any time you change effective case capacity you have to re-calculate the load.
If you really want a simple, subsonic rifle--get a 45 ACP carbine and load up some 230 grainers at around 850 fps. There's your answer...
