Setting headspace ??

You can't have any feel on close if you are cocking the bolt every time you close it. My guess is you though the resistance you felt was cocking the bolt but you were actually closing the bolt very tightly on the gauge.

Yep- bolt's gotta be stripped as stated above.
Easy to compress thousandths beyond actual contact otherwise.

Any consensus on whether the extractor needs to be removed as well? I guess it's cheap enough to replace, but I was hoping to keep it budget. I'm way over

extractor should be ok. You can feel it move past the rim and then go free again.

The extractor isn't exactly an expensive part... but no, it doesn't need removed or replaced. Just pull the bolt all the way out, hook the dummy cartridge or case into the bolt face with the rim under the extractor, and gently insert into the receiver.

When I set the headspace on my new 308 barrel I used the go / no-go gauges but did not like the end result with fired brass so I made it just a little tighter on the go gauge. Easy to do with the proper tools, now both of my 308's are the same fired brass size.
