320 is what my smith uses.

Depends on how shiny you want it. 400 grit is good for getting them ready for bead blasting, but if somebody wants them really shiny I'll take it to 600 grit and then hit it on the buffing wheel.

320, then 600, finish with 1200 if you really want it to shine. That will almost get it a mirror shine. Or just use 320 for a utility grade polish.
