I'm installing a 6mmBR Brux Target barrel on a Remington 700 action. I assume that the optimum headspace is as close to the "go" gauge as possible. I adjusted it so that the GO gauge chambers easily. With a .001 shim on it, it still chambers easily. With .002" shim, the bolt will not close. so I'd guess I've got about .0015 over the minimum. I could take another .001 off the shoulder of the barrel if anyone thinks there is any advantage to tightening it up any more.
