This thread on thehighroad.org describes an oil finish using Minwax Antique Oil Finish.
It makes a very nice smooth low gloss (but not matte) finish that is also very durable. Depending on how you do it (e.g. buffing, etc.) you can make it more or less glossy.
I finished my Sharpshooter Supply laminate stock for my Savage using the above method and am very satisfied. With enough coats (after the first three coats, it is fast, you can do as few or as many as you want, and you can touch it up later by buffing with 0000 steel wool and putting on another coat) it filled in the grain completely, and dried rock hard with no tackiness whatsoever even in the Texas heat and humidity.
