As a settler, I’ll settle for things like Jack rabbit stew or rain water soup but I’m drawin the line with Beaver , Muskrat or Coon until the apocalypseI've eaten coyote at a Mountain Man Rendezvous while edible in a BBQ sauce it did taste just like it smells when you are skinning them. I didn't go back for seconds. There was Mountain lion and Bobcat that were good.
When I ran traplines, beaver, muskrats, raccoon went in the freezer snowshoe rabbits killed while checking the line went right in the pot for dinner back in camp it made a nice change after beaver liver, onions and eggs for breakfast, beaver jerky on the line for lunch and beaver stew for dinner.
Stewed muskrat with dumplings and sweet/sauer red cabbage is one of my favorite meals.
We would roast raccoon just like a turkey, in fact we did for a couple Thanksgivings with all the fixings from the garden or wild.

@jds holler nephew an me are heading over in a couple weeks to hunt coyotes.
Jack's are also on the target menu.
Gonna be staying in a bunkhouse the other side of Lakeview.
He tells me we let ourselves in, it has 10 rooms a kitchen and a pool table.
Rules are leave no mess and put 40 bucks in the microwave.
Do you know the place?

That sounds like a plan JD.Hey Brett, I could tell ya where this place is if you don't already know. It's usually a good solid bet for rabbits, and not far from where you'll be.

That’s the same joke we told tourists when I was trout guiding. They didn’t appreciate the humor. BTW I love eating trout.bunnies can be quite tasty,
My buddy would do jacks with salt, pepper, BBQ rub, put’em on a cedar plank, bake at about 350 for 90 minutes, take’em out, throw the jack in the pail.....eat the plank.
One spring it was pretty warm so my wife drove up to trapping camp and picked up our furs. She took us to dinner at the café in a little town. When the waitress asked how the meal was my partner said "I've been eating beaver for two weeks, this was great" the incredulous look she gave my wife was worth the price of the meal.
