Issues with offsetting scopes?

It's easy to do with available parts. It's also been done with extreme castoff stocks for shooting left eyed and right handed. That avoids the scope issues.

To the best of my knowledge and belief it will be absolutely impossible to remove the resulting parallax issues at more than one range. Maybe not. Similar parallax issues come up with laser sights where the choice is to aim off at all ranges or to zero for a given range and hold off one way for closer than zero and the other way for farther than zero as the line of laser and line of flight cross at the zero range.

If it were me I'd use a scope with a Christmas tree reticle and zero for 100 yards. As distances increased to a thousand yards and more, even assuming still air, I'd hold higher by moving down the Christmas tree and also move over on what is normally a windage adjustment +/- the windage adjustment. For hunting I wouldn't worry about it.

I've been shooting with an offset to the left scope on all of my rifles except one. The centerline of the scopes are 1.75" left of the centerline of the bore. Therefore the windage must be adjusted for that 1.75". At 100 yds it is 1.75" or 7 clicks. Becoming less and less at longer distances. Ie 3 or 4 clicks at 200 yds. Doesn't seem to make a lot of difference at long range. Verticle adjustment is the same as standard scope location.
