Finally Getting Out of Commifornia

It's the same thing when people move to a rural area from the city. They leave because they want lower taxes, peace and quiet and less restrictive ordinances. But damn if they don't often immediately set about putting those same things in place. Save everyone including yourself the trouble and stay put if you aren't ready to accept your new place of residence as-is.

I lived in the Seattle area in the late 80's early 90's when that area got "discovered". Near Snohomish they built a bunch of McMansion's on a hill overlooking the fields of a scenic farm. Well it was a dairy farm and like most dairy farms they had a manure spreader. :) Oh the complaints......

Brisket comes from the lower chest of the animal and a full "packer", composed of both the flat and point cuts, will weigh between 14 and 20 pounds.

If you're looking for a smaller fool-proof smoker, take a look at the Pit Barrel. They use charcoal and wood chips/chunks and are great for smoking smaller quantities of meat (1-2 briskets / 4 slabs of ribs / several chickens). Riesel gave a good overview on smoking brisket; I'd listen to his advice.
 
It seems that the pit barrel cooker is sold at Costco. We have a large Costco store not far from where I live. I might take a look and see what's available.

Still need to get a Weber though - wife has heart set on it!

I also it seems need to order in a piece of brisket. It's not a regular cut held by butchers apparently so I need to make a "special request". I'm not sure how much it will cost but I'll be looking to try a smaller piece to start with - probably about 6 lbs or a bit less. It seems our brisket is the same piece of cow as yours!

We just found a blend of mosquite and hickory in the shed. A bit old though so I might just get some more in case this stuff goes off with age.

To date, the only way I have ever had brisket before is when cooked in a slow cooker (max 4 lbs) or in a pressure cooker. It never occurred to me that one would smoke and BBQ it! Sounds good!

It's mostly Eugene north to Portland up the
I-5 corridor that has this state screwed.
Our state is predominantly red except the metropolitan areas, this in turn put the screws to the rest of us.
 
With a brisket go 10 to 12 lbs., first is PRIME, second is CHOICE, third is SELECT you don't want SELECT.Takes 10 to 12 hours to do right,and keep your temperature 250 or less.
I do this all the time with no complaints.Post Oak or Hickory is best.I use a offset firebox smoker.

As far as the emigrants from other states coming to Texas, I think we should hire a "special prosecutor" to fully vete they have no hidden liberal ideas about changing Texas. Perhaps, they should also require a vaccination to insure they do not relapse.

For those already proud of America, like it is, come on down to God's Country, we welcome you. It's best you get in high gear because we're running out of room PDQ. ;):rolleyes:

Glad you had good results with the Treager. I am going to have to go pellet as well as I have yet to see an oak tree on my place here in Montana...

Just got myself a Weber Q3200 for regular roasting and BBQ stuff AND a Weber 57cm Premium Kettle with GBS 2015 (whatever that is) specifically for smoking meat/fish/whatever! So no gas required on the kettle.

The plan is to use the Q for cooking veges etc, regular roasts (like chooks, lamb, pork), and steaks I suppose, and the smoker for, well, smoking.

I also got myself Red Gum charcoal, Briquettes, and Hickory with Mesquite chunks. I think everything I need.

Furthermore, I picked up a 17 lb piece of brisket. Aged and grass fed. I have cut it in half as my wife and I would not be able to eat 17 lbs... The brisket was $7.70/lb (about US$5.40/lb). I thought that was rather good - especially for aged and grass fed beef! How does that compare with what you guys pay for brisket?

Will assemble it all tomorrow and hopefully start cooking Sunday. Early! :) I intend to use the Weber instructions on how to drive the gear, and Riesels instructions along with some others on how to cook the meat!

It will be somewhat of a learning curve for me as I've never done this before. Sunday's going to be a long day. I expect a screw up of some kind along the way.

It seems to me, reading the non-brisket postings in this thread, that there is the United States that include both "North" and "South" (I guess this includes California that is "West") - and Texas! :-)

I'm not really trying to stir the pot - I have been interested for many years. I have been to most states in America but not Texas (your largest). Maybe I have to do something about that...

Isnt it a shame you have to leave your home and relocate just to be free in the USA. It is ridiculous how politicians are driving out great people.
the real problem is that politicians think they are driving out the right people/deplorables. By the time they figure out they drove out good people all that will be left for population is the sediment off the bottom. At which point it will be too late.

I would like to subscribe to that theory and really hope you are right. From what I read about Toyota moving to Texas, they had no real problems bring their people and when they got ready to add an additional 1000 employees they had over 100,000 applications. The Toyota manufacturing plant here in San Antonio hums right along and is a big contributor to the local economy. Our problem right now is our City Leaders think we want to be like Portland or Seattle. Hope to fix that in the next election coming up soon.

Texas was a Confederate state. There are many statues honoring Confederate Generals, many in the process of being removed, including a plaque in the Capitol Rotunda proclaiming the war was not about Slavery.

Schools are being renamed too. The false narrative is slowly being replaced, but it's taking it's sweet time.

One thing you'll notice is the lower cost of living in Texas compared to CA. Food (groceries) is about half the price, thanks in a big part to HEB, a big family owned grocery chain originating in Texas. Walk into a Randells in TX (AKA Lucky Foods,) and prices are much higher.

One thing not mentioned by the OP is HOW he is moving his firearms. I packed mine in unremarkable boxes and positioned them to be packed in the middle of the moving van. The mover immediately figured out what was in the boxes and told me I had to declare any firearms. He then told me he was under investigation by the FBI for firearms theft as he re-packed the boxes just inside a side door, for a quick grab and run theft. I called him out on it and he put them back in the middle of the load. They made it to the new home unscathed.

Home prices are much lower, but property taxes are incredibly high. Texas is a "non-reporting" state so real estate sales are't automatically reported to the tax assessors office. So they invent sales figures, aren't required to show how they arrived at the valuation, so expect to get screwed if you don't protest your taxes every year. Expect to pay $500 to $1000 a MONTH in property taxes. Sign up for your home owners exemption and if you or your spouse is disabled, BE SURE TO SIGN UP FOR THAT EXEMPTION. They won't volunteer that information, but it freezes your tax increases.

California has a lot of consumer and employment protection laws. Texas doesn't. It's a no frills state.

Texans tend to be more patient while in the car, and don't honk the horn as soon as the light turns green like they do in CA. Light cycles are typically longer also, allowing more traffic through the intersection at each cycle. But don't make the mistake of being a typical Ca. left lane hog, the left lane if for passing only so move over when a car approaches from behind, it's the law, even on a two lane road. Do it or you might just be shown the ditch. The max speed limit in Texas is 85 mph in some areas and many cars are doing 95, so pay close attention to your mirrors. Truck speed limit is the same, not artificially lower like CA.

Texas gun ownership laws are some of the most lax in the nation. You can legally own fully automatic weapons, if that's your thing, and suppressors. College kids are allow to carry concealed in school, a really stupid law passed just to spite other states efforts to raise the age for gun purchases and restrictive concealed carry laws. It's a Texas thang....

I was born and raised in Nevada. Hell my grand father was the first baby born in Mesquite NV. I will always will be proud of being FROM the Battle Born State but I will never live there again. Everyone from somewhere else that hated where they were from moved in. Then damn if they didn't tell us "Hicks" that where they were from had a better way and proceeded to turn it in to the f*$%#@ mess they had left. Now the whole State in ran by the Democratic Party. Clark Country (Las Vegas,Henderson etc.) thanks to the peoples unwavering support of Harry Reid and his liberal immigration and other liberal policy's have the the some of the worst schools, if not the worst schools in the country. I'm not proud of it but its the only time in my life that I have quit anything but I could see me staying that me staying was going to fix anything and moving was better for my children. As much as I would like to blame the politicians its the people that elect them that are truly to blame. Sometimes we don't get the representation we want, we get the representation we deserve.

I have been working FID/UW Counter-Insurgency most of my adult life. First in the Military and now as a Contractor. I will tell you all now that what is going on in our country is not about immigration its about changing our culture. The left cannot change our core beliefs about God, Country, the Constitution and our God Given alienable rights so they will dilute our vote and eventually us out of existence.

I feel immigrants to our country and even from other states should remember is why they left the old place behind, assimilate and integrate into their new environment and its culture.

I am very sorry for the rant but I truly hope the OP remembers why he left California and wholly embraces his new state

Full auto firearms and supressor ownership is legal in Missouri as well, but you still have to abide by federal law. Expensive and time consuming.
