Epoxy or wood glue for gluing dowels to a stock?

I've used both. If it's a tight fit, I would consider wood glue, I've used tight bond II with good results and that's usually what I use for grip caps and fore end caps along with a dowel or two when needed. You need a way to clamp those tight to get a nice aesthetically pleasing seam. If you glue it, i'de go back in and bed the action over top of that with epoxy and epoxy pillar it.

Just curious as why they are now 3/4" vs say 3/8" or so? I would want to be removing the minimal amount of stock material to achieve whatever fix I am planning.

I personally have repaired many stocks. I rarely use carpenter's glue but when I do it is TiteBond 3 not TB2 reviewed by woodyexpert . More water resistant. I prefer epoxy or for cracks, a good cyanocryolate, esp when gluing a finished stock and not wanting to refinish it if possible. For the OP's problem, Titebond 3 does sound like a good choice but any of the three would do the job perfectly if done properly.
