Entry PRS Build- which 6mm?

6mm fatrat would be my choice with no recoil 100-200 yards.
Anything over that would be 6 cm or dasher.

I ran a 6mmAR Turbo40 out of a gas gun for my first year in PRS (pretty much the same thing as a 6mmFatRat). It did pretty well even at the 1000+ yard distances. Pushed hard out of bolt rifle, I don't think it would give up much to a 6-Dasher. Didn't mention it because OP said .473 bolt face.

Also, if I go 6CM any thoughts on twist? it seems 1:8 is the general consensus. However, most of my shooting will be done at shorter ranges, so lighter bullets and a little slower twist might be a better idea. My thinking at this point is basically a 600 yard gun, although 90% of my shooting will be 100-200 yards.

Assuming you are close to sea level, a 7.5" twist would give you more bullet options than an 8" twist for 600 yard shooting. I'm thinking of the 110 Gr Sierra's or 105 Berger Hybrids.

Agree with this. I live and shoot near sea level and the 7.5 and 7.75 twists shoot a little better than the 8 twist. I’m shooting 7.75 twist now with 105 VLDH’s and 105 Hybrids.
