Wisdom there. Good, Fast, and Cheap is something anybody serious about a service job strives for, but can only rarely deliver. What they have to assess is whether or not they're delivering at least TWO of the three, and how that plays out for their customer base.
Truly excellent gunsmiths fall into a category where they can sometimes JUST deliver "good". It can be such a custom, high-grade service or item, or so rare, that they don't have to care about going at breakneck speed, or charging as little as possible.
Think the Warner Tool Company cared about how many sights they could make in a day, or how expensive they were? Not a chance. Only one company ever had their reputation for excellence, and it was only a change in the MARKET that caused them to stop building $500+ irons.
As the consumer, you should only expect to get two, and sometimes one. Just don't put up with only one unless you have to.
It's also sometimes useful to think through the power dynamic of your conversation: if you are speaking to a business, and they are really small, but still really backed up, and really expensive, don't be a d***, because chances are good they'll rightfully tell you to pound sand.
Always lead with sweetheart, and only follow with asshole if required.
