BR with 7 1/2 twist

Berger 80gr FB Varmint shoot well in an 8 twist with 4895 or XBR8208 for me. Plus they have a long bearing surface so you can prob load them into the lands even with a longer free bore that the fast twist is likely to have.
 
I don't think you'll have any trouble shooting whatever you like but that is merely an opinion. I can tell you I have launched many a 40 grain Amax at 3,700+ FPS in a 7 twist AR barrel. None have blown up and it is very accurate. It's made a great combo for "ride & shoot" prairie dogging.
I am assuming your barrel is a cut rifled and hand lapped Kreiger, Bartlien or similar and has been had lapped.
As for those online twist rate calculators, I've never seen one that advised you were "over stabilized" with any bullet/twist combo.
