Just reinforcing OP’s initial plan. IMR4064 or H4895 with a Barnes 165gr TTSX will definitely do the job well if you do your part. I also personally think sticking to 350 yards or less is prudent. Not impossible to go further, but doesn’t hurt to be prudent. Good luck!

I know that IMR4064 and Partitions of any weight, but particularly the 165gn in a 30-06, have taken elk for decades. A 308, while it is the anemic little brother of the 30-06, will still get the job done too with the same bullets and 150fps less at the muzzle. IMR 4064 is a fantastic powder and I have never had a gun that would not shoot it really well.

If you want to be able to shoot elk in the wrong place and have them die fast, you’ll need a bigger gun but I don’t think that is what was asked.
 
I also read many reviews, asked for opinions, etc. Then a few years ago I came across Nathan Foster's Web site and books such as "Terminal Ballistics" which is based on nearly 10,000 hunting autopsys plus an excellent discussion on the anatomy of bullet wounding\killing. Check his web for free info and his books for less than the cost of a box of ammo, and you can make a more informed decision.
 
IF you hit an elk where you should with any 165-180 hunting bullet at the ranges the OP stated you will have a dead elk with a 308. Pick the one your rifle shoots most accurately and practice, practice, practice. It's amazing how much better you are at hitting them where you should if you practice. A friend has killed 2 bulls and numerous cows with his Rem. 700 and 180 gr. Core-Locks
