New Food Thread, No Title sorry old mike

Oh yeah! Cream puff, éclair, profiteroles, and more! Ever made savory dish with pâte à choux? Parisian Gnocci are excellent. Up the flour and butter, reduce the egg. Add in Dijon mustard, parmesan cheese, finely chopped parsley and chive. Pipe into boiling water, cutting the choux into 1" strips as it comes out of the piping bag, as many as you can in 1 minute. Boil until floating, then 3 minutes more. Set aside and repeat with whats left in the pastry bag.

OMG, my buddy bob would kill for that deer heart. I did one for him w brown bourbon gravy. Thank You So much for posting all this. We here are not worthy of your skill level...

That was my first attempt with kelaguen and I kept it pretty true to its roots, but a few minor tweaks to adjust to my pallette for next time would be slightly less salt in the form of soy sauce, bit more crunch from the peppers (not too much heat though) and probably do a 50/50 lemon/lime juice mix. I also did some fried tacos with the heart.

The lemon basil cottage cheese mix was amazingly refreshing with that chicken dish. Those flavors really worked well. I don't use cottage cheese as an ingredient often, typically just plain with fruit, but that was delightful.
 
You Sir have raised the bar. I cheated poor Bob on that deer heart. We resorted to our old tried & true red pepper flakes on the sauce. I need to read more about cooking. Thank you again uncle mike

Check out Hank Shaw and his site honest-food.net he has several good books out now, too. He's been on several episodes of Meat Eater. He's also somewhat local to me (only an hour away), so his seasonal recipes always line up with what I can get/harvest/gather too.

I don't go to Wooster St. anymore. Driving, walking or cycling can be very hazardous to your health. I'll stick with the good pizza from Waterbury, Vinnies, Zackerie's, John's and so many others can't list them all.
New Haven isn't what it was when we were kids, at that time they had all the best resteraunts, not so anymore.

I'm really listening [tomrsmikeinct] & being a good boy now [mostly] 33 years & counting. A Happier. Rounder, fatter, little de-fanged manservant. I still flirt w the babes, nothing has changed. I swing the charm right at the pretties. I still got it, grin. New Plan in my older phase. I can't run down the fancy trim. So I lure them in with foods. Grin Grin Grin. I do enjoy good pizza. This is CA though, so our pizzas are usually a bit different. A few places make a good NY style. No decent Chicago pizza here I've found. Lots of cheap pizza. Plenty of "gourmet" pizzas though.
 
You want lousy pizza go to Fla. It has to be the water. One guy from Long Island figured it out and started bringing water in from up north and he has some of the best I've ever had. He is located in the Fort Lauderdale area name of the place is Anthonys Brick Oven Pizza. If you are ever down that way, give it a try.
