That was my first attempt with kelaguen and I kept it pretty true to its roots, but a few minor tweaks to adjust to my pallette for next time would be slightly less salt in the form of soy sauce, bit more crunch from the peppers (not too much heat though) and probably do a 50/50 lemon/lime juice mix. I also did some fried tacos with the heart.OMG, my buddy bob would kill for that deer heart. I did one for him w brown bourbon gravy. Thank You So much for posting all this. Check out Hank Shaw and his site honest-food.net he has several good books out now, too. He's been on several episodes of Meat Eater. He's also somewhat local to me (only an hour away), so his seasonal recipes always line up with what I can get/harvest/gather too.You Sir have raised the bar. I cheated poor Bob on that deer heart.
