Is an m16 extractor the same as a Sako extractor?I'm no particular fan of the anemic 308 so I'd have the bolt face opened up, a M16 type extractor installed and make it a 300WSM or 300 Rem SAUM.

Yep he did. My bad. Failed to read on.Anemic .308 ?..... Seriously ? That's how I referred to Camaros back in the 70's when I ran a Hemi Cuda . The referred-to magnums , SAUMS are "anemic" compared to a Chey-tac , or Barrett , too . Think the OP made reference to commercial ammo , also .
I have a trued REM 700 SA receiver 308 BF and I’m debating on which 30 cal chambering to do. I have a 1n10 twist Hart bbl for the build. I’d prefer a commercial available ammo. Is .308 win going to be the best option?

I'm one one of those guys who thinks every shooter/hunter should own a rifle chambered for the .308 Win. This is especially true with the advent of many new commercially manufactured variations available across the counter. The wide variety of bullet styles and weights makes it easy to match the ammunition to your needs.
Having stated this, I will say that if you have a second chance or choice to make, I'd say go all in with the 6.5 Creedmoor as mentioned above. There is some great ammunition manufactured for this cartridge to cover most situation you might find yourself in whether hunting or competition.
