When you think about it, all they eat is grass, hay and clover... say as cows (almost).
Never have eaten one. Shot a lot of them. People don't think they climb trees either,they do,(groundhogs) not people. Had a friend that said they were good if you cooked them in a pressure cooker.

I can't recall what the exact stat was, but I read somewhere that four, or maybe six of em actually eat the same amount of that stuff as a cow.

Out west here, where ground squirrels are our primary varmint, I've seen the squirrels consume ALL of the spring alfalfa crop until the hot weather kicks in and the growth exceeds the rate at which the "squeeks" can eat it. I hate to see the farmers use poison on them, but I can't blame them. jd
 
I ate a opossum once (3 bites). Threw the rest of the carcass in the back yard and watched my hound take a leak on it and walk away. Groundhog can't be that bad.
 
I'm a firm believer that for everything that runs, crawls, swims, flies, slithers, or otherwise motates on this earth, that there is probably a good way of rendering it edible or even tasty.

I learned a long time ago that with a can of mushroom soup and an onion, that I could turn ALMOST ANY meat into a meal that ALMOST no one would turn down. I haven't personally done an Eastern ground hog, but I bet it would be easy. :) Meat's meat, and a man's gotta eat. jd

They make good dog food. We kept our dogs fed on fresh ground hog most summers..
Yep Had a big old stump down by the saw mill,would chop them up with a "brush ax" 4 legs,one head, chest above the intestines. The farm dogs loved it
The guts got tossed in the kudzu behind the neighbors mail box.( they would call the cops when ever we were shooting)

Ground hogs are like most rodents and the meat is hard to distinguish from beef IF it is prepared properly. You need yo gut them as soon as you kill them and cool down the critter. If you don't have refrigeration then use an ice chest but keep them out of the water. When skinning them out you have to be sure to cut out the scent glands without breaking them. Rinse the body cavity with cool water with some vinegar mixed in. ( about 4 parts water to one part vinegar) Keep the meat cool (34 to 40F) for about 24 hours. You can then bone it out and use it in soup or stew or grind it and use as you would burger. It is good in sausage too.

Bear in mind that I have eaten things that most people would not think of as food and enjoyed quite a bit of it. Most insects are ok, if not palatable, but I would rather have slugs, snails or grubs than mature insects.

Even easier..... let it age a bit and just throw the whole carcass it in the scrapple kettle. Mmmmm Mmmmm good / Gude essa
 
Gosh!! I thought the tales my dad told us about eating jackrabbits in the late 40's was bad enough!!
