why is my seating die crushing my brass?

Maybe re-adjust in in the press. Make certain the lock nut is tight and make certain the brass is going all the way into the shell holder.

Are we talking about seating a boat tail bullet into a chamfered neck?!?

How about a few details of the components you are loading and the neck prep details?

Crushing a neck with a sizer is one thing, and another with a seater. Also, tell us how you set up your die.

If you have more than one similar looking die, now is the time to make sure you didn't grab the wrong one.

The die probably can do a roll crimp and was set up incorrectly. Check the instructions.
I agree with this.
With seating stem backed out most the way, run brass in shell holder to top stroke in press and screw seating die down to touching brass. Now lower press ram and back seating die out a turn and lock it down. This should guarantee brass is not hitting the crimp feature of the seating die.

Sounds like classic seater body screwed down too far. As already mentioned back it out at least a full turn. If as you said it has been working fine and no changes, then my guess would be the brass has gotten longer and has started hitting the inside of the die. Before changing anything, run a sized piece of brass into your seating die and see if it damages the case mouth or puts a bulge at the body soulder junction.
