Which of these chamber configurations is best for my 308?

Going to rebarrel my 260 as soon as I shoot up my 6.5 match bullet collection to 308 so I can work on shooting up my 30 caliber bullet collection. I will play around at some matches but will be limited mostly to 500 yards. I will also use this rifle for some deer and hog shooting whenever a sendero/tower blind situation comes up. The rifle hopefully will end up around 10-11 pounds with a 26 inch barrel from Criterion, thinking a Light Palma contour. I will likely never use any bullets longer than Hornady's match bullets that weigh 178 grains. Opinions on twist also appreciated. I was thinking 1-12.

Twist: 1-7, 1-8, 1-10, 1-11, 1-12, and 1-13.

Eleven would cover the most ground from 150-190 gr Bullets probably , under 500 won’t matter as much either

If you're going to use it for Deer hunting , also . I'd lean towards a Ten twist and a 2013 FTR reamer . Simply so you could go to a 185gr bullet . Little better accuracy at longer range . JMHO .

I had great results from my 24" 5r 1-10 twist 308 with the 178x.

So I would suggest 10 twist. I don't have any experience with anything other than saami freebore in 308. So I can't offer much advice about that but I think you can confidently go with 1-10 tw.

10,11, or 12 twist. Whatever is available. You wont be able to tell the difference. Same for the chamber. All the different reamers come into play beyond the ranges you mentioned. At less than 500 yards they will all work. If you need to buy a reamer a standard 308 would be fine.
