O.T. Sharpening knives, LOL!

I destroyed a benchmade edc with one but thats how you learn to use it I suppose
 
sharpening is an under appreciated skill. I use a variety of things. Ceramic, diamond steel, Arkansas stone, water stones.

I do all my wood chisels and carving chisels by hand. Either on diamond impregnated flat steel or stones. My kitchen and skinning knives get stone sharpened and final dress with ceramic.

Years ago, I’d drink cold beverages and sharpen everything in the house. I learned that wearing leather mittens was very good protective gear when operating with cold beverages. They had enough cuts and nicks to prove their value.
I use the Veritas angle jig with the brass wheel on my handplane blades I use 10.000 grit last pass I guess it's sharp, I've got .002 maple shaves clean but that's been yrs ago...I like to watch the Japanese do their competitions it's pretty cool 4 ft long shaves at .001 I could be lying also I think..I don't know but the plane blades are scary sharp with a mirror finish I've tried dropping paper on the blade and it will cut about a inch I could be lying also
 
He will buy all equipment needed, set up a work area (to my specs), and wants me to train another employee on MY methods....

Sounds like you could enjoy your job and make money in the process. Don't know how old you are but you might want hold off a little bit on how well you train your "helper", and see if it turns into a real two man job. Good knife sharpeners are hard to find, good luck... John
Exactly what I was thinking.... wants you to train an another employee.... if he has you what's the need to train someone else. I would do it but wait to train someone until you think you are ready to slow down.

I’ve seen some videos on facebook of the Japanese demonstrating their knife sharpening. Slicing through a folded sheet of paper standing on edge and not knocking the paper over. That’s pretty sharp!
 
I set up a knife shop to build my own knives several years ago. Havent had time lately, but I've handmade some very nice custom knives. Its fun. Get a 2x72 knife grinder. Sounds like you will be making knives at some point. They are a hard sale though. People gotta be into it to buy a custom knife. It isnt cheap to make knives or buy the parts to do it.

With my Japanese Kitchen knives I can set a single grape on a cutting board and cut paper thin ,see through, horizontal slices with out having to hold/touch the grape.
 
Years ago I owned a very old katana. It probably had not been sharpened since WW2 era or earlier. That blade was wicked sharp…

Having watched documentaries on Japanese sword making, there is a lot of effort and skill that goes into the sharpening.
