MAKIN’ DRESSING

I use to make a cornbread dressing for my Grandfather. Would put a lot of Turkey in the dressing. Some days, that would be all he would eat for dinner
Mine has a lot of chicken in it.
Here is my recipe……
In a large pot, boil 6 chicken breast and 6 thighs, with skin. Salt and pepper the broth to taste. Remove chicken bone it And cut into small strips.
Bake four 8 inch diameter cornbread cakes. I use the Texas instant Mix.
Cut up and dice 16 celery stalks and and around 30 green onion stalks. Boil in a large 2 gallon pan, salt and pepper to taste. Cook untill celery is soft and you have a good celery/green onion soup.
Hard boil eight eggs.
peel and dice 8 apples.

Break up corn bread cakes in a large bowl or pan.
Pour in the entire celery/green onion soup mix. Mix thoroughly.
Add the diced chicken, mix thoroughly.
Start adding the chicken broth, mix in untill you have a soupy texture. Depressing a spoon on top so liquid fills it is about right.
Add the diced apples.
Add the 8 boiled eggs after dicing them.
Mix it all up using your hands. Add two sticks of melted butter.

As you mix, add salt, pepper, and sage to taste. Remember, a little sage goes a long way.

Pour the mix into aluminum pans and bake at 350 degrees for 3 hours.

This is a fairly simple dressing but is really good.

Almost as much as we fixed during KP;)
 
The corn bread dressing is about the only thing I really like at Thanksgiving. I can make the whole meal out of it. Got to have a good giblet gravy to go with it. About an hour after eating that, I need a big slice of homemade Pecan pie to finish it off. I will gladly eat left over dressing for a couple of days.
 
That looks delicious! I’m doing a little better than that! We’re joining our cousins for Thanksgiving but her stuffing is “different” than what I like. We made our own turkey dinner on Sunday and I’ve been eating turkey and stuffing for the last 3 days! On Monday , we made a big pot of turkey bone soup.
I’m in heaven!

I make a different kind of dressing, old French Canadian style. I used to watch my mother make it and now I do it.
Ground beef- 3lbs.
Ground Pork- 1lb.
4 or 5 medium potatoes smashed ( no milk or butter
A little diced onion and celery
ground clove, ground nutmeg just enough to smell and taste
salt and pepper.
Brown all the meat together, add onion, celery while browning. Boil potatoes and mash.
While everything is still hot mix it all together. when it cools (next day or so stuff the bird and enjoy dinner.
We also make pies from the mix, for cold winter nights, take out of freezer defrost bake at 350, a little over 1.5 hours.

You read my mind. Wife makes the little pecan pies. Easier to snitch and hide for later. Giblet gravy and dressing, deviled eggs, and good smoked ham.
 
I am currently hiding in the gun shop. If I go inside I will be forced into slave labor "helping" with the preparations. They didn't want a deep fried turkey this year so I am free.
