Film Dip & Ceracoating...

I am thinking (which is always fraught with danger) of doing my Remmy 700 SA.
Magpul stock, 700VS 308.

My thought is a Film Dip on the stock, and Ceracoating the barreled action.
Kryptek Highlander and a sand ceracoat color.

Does this sound like the right way to go?

This is like asking us if it is a good idea for your wife should dye her hair red. Seriously, if it appeals to you go for it. Personally I've always preferred the look and warmth of a nice piece of walnut and a nice bluing job.
 
I just had two rifles cera-coated in kryptek and I like it. The kryptek can be done either way, but I was told that cera-coat holds up better....it is also of course more expensive to have done. Same guy that did mine also hydro dips. I have several other hydro dipped guns and it does wear. Not that the cera-coat cannot, it is just tougher stuff.
Here's the issue...cera-coat has to be "baked" and both my stocks were McMillan's. No problem for the fiberglass, but he did warn that the glued on recoil pads sometimes come off and have to be glued back on. I don't know about how well or if it is even recommended to heat up a Mag-pul. They are plastic and you probably better call Mag-pul first and see what they say....if they tell you it's okay I would suggest you definitely opt for the cera-coat. Mine is kind of a custom color...I wanted a little more green in the pattern than just the "highlander" Here is one:

 
I had one cerakoted charcoal and it is nice. One of the only options for stainless. As for the stock I have no clue but the Magpul stocks look pretty good to me au-natural.

You can cerakote the polymer stuff just fine, you just cook it at 180 for a bit longer instead of 300 like you would for metal.
 
If the rifle is going to be bashed around a little I'd go for cerakote. If you're going to baby it, then I'd consider dipping. I dip my F class stocks as I like the finish of dipping, but it's nowhere near as durable as cerakote.
